Light as a cloud: Thanks to a very high hydration (80% water), the result is an incredibly airy texture.

Easy to digest: We take no shortcuts. We use Italian flour that is less refined and more nutritious, and a fermentation process of up to 36 hours. The result? A pizza that fills you up without weighing you down.
The secret lies in our "Prefermento"
The heart of our kitchen is our prefermento (pre-dough), a sort of "soul of the dough" that requires 24 hours of rest before being combined with the final dough. It is this process that gives our pizza the complex aromas and fragrance that you won't find at any other pizzeria in the area.
